After Russell returned from his travels in Europe, he drew the conclusion that at it’s very best the Australian food style is both exhilarating and exciting. At Armstrongs we believe that Australia has a definitive food style of it’s own and always will. However, like the tides of the sea, we will move into a different era and an increasingly more complex style. We must be aware of speed and execution and at the same time be responsible for the study of the cultures of the people from whom we wish to borrow their cuisine. This must be achieved before we can blend their ingredients and ours with some degree of authority. The flow-on effect is seen in the standardization of quality product that is produced to ensure all guests receive only the best. Whatever we do is done to the best of our ability. We have the knowledge and the talent to be better than average Russell’s staff are treated as family… when you are a part of the Russell Armstrong clan you are absorbed and must give your all. Our chefs are driven to produce the best they possibly can. It’s all or nothing – no middle ground. While he appreciates simplicity, Chef Armstrong strives for imagination in dishes as well. “Some chefs overdo the simplicity angle,” he said. “Fresh is good, but it doesn’t mean that fresh ingredients cannot be used creatively.” Wedding, corporate, seminars, intimate dinners or business lunches our philosophy remains the same. |
